A new barbecue food truck, Three Stack Shack, rolls into Tosa

Three Stack Shack, a new food truck selling barbecue ribs and other meats, debuted today in Wauwatosa.

The truck can be found from 11 a.m. to 6 p.m. Thursday through Saturday in a parking lot just west of N. 68th and W. State streets.

The truck uses cherry and hickory wood to smoke its meat, including St. Louis-cut ribs, sold by the full rack ($21.75), half rack ($13.50) and in a dinner ($9.75) with a choice of two of the sides, spicy slaw, baked beans with bacon or chipotle cornbread.

The truck also sells a cup of ribs — three bones ($6) — designed to fit in a car’s cupholder. Three Stack Shack also sells Carolina pulled pork sandwiches ($6.50) and hot sausage on a Peter Sciortino Bakery roll ($4.50).

Randy Piering, a former co-owner of Tony & Mia's Italian restaurant in Delafield, launched the truck with business partner Shawn Collier. Piering became interested in smoking meats when he began making the smoked bacon for the restaurant's brunch.

The truck also will sell some breakfast sandwiches in the mornings, such as egg and bacon, and sell Valentine coffee, Piering said.
